  1. Preheat the oven to 325°F (160°C).
  2. In a saucepan, heat the coconut milk, lime zest, and lime juice over medium heat until it starts to simmer. Remove from heat and let it cool for 10 minutes.
  3. In a mixing bowl, whisk together the eggs, sugar, vanilla extract, and salt. Slowly pour in the warm coconut milk mixture while whisking continuously.
  4. Divide the custard mixture among 6 ramekins or oven-safe dishes. Place the ramekins in a large baking dish and fill the dish with enough hot water to reach halfway up the sides of the ramekins.
  5. Bake for 35-40 minutes or until the custard is set but still slightly jiggly in the center. Remove the ramekins from the water bath and let them cool to room temperature.
  6. Refrigerate the custards for at least 30 minutes to allow them to set completely.
  7. Before serving, sprinkle each custard with shredded coconut and garnish with lime slices if desired.
