Claudia’s Zucchini Bread
Zucchini bread became popular in the United States during the 1960s when home gardeners had an abundance of zucchini and started incorporating it into various recipes.

Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.

Grate the zucchini and squeeze out excess moisture.

In a large bowl, combine the grated zucchini, flour, sugar, vegetable oil, eggs, vanilla extract, baking powder, baking soda, cinnamon, and salt. Mix well.

If desired, fold in the walnuts.

Pour the batter into the prepared loaf pan.

Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let it cool in the pan for 10 minutes.

Transfer the bread to a wire rack and let it cool completely before slicing and serving.
