Rainbow Cookies
Rainbow cookies, also known as seven-layer cookies or Italian tricolor cookies, are a popular treat during the holiday season in the United States. They originated in Italian-American bakeries and are known for their vibrant layers of almond-flavored cake and apricot jam, topped with chocolate.

In a mixing bowl, cream together butter and granulated sugar until light and fluffy.

Beat in the egg and vanilla extract.

In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.

Gradually add the dry ingredients to the butter mixture and mix until combined.

Divide the dough into 6 equal parts.

Add a few drops of food coloring to each part and mix until the desired colors are achieved.

Wrap each colored dough in plastic wrap and refrigerate for 1 hour.

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

Take a small piece of each colored dough and roll it into a ball. Place the balls on the prepared baking sheet, spacing them apart.

Bake for 10-12 minutes, or until the edges are lightly golden.

Remove from the oven and let the cookies cool on the baking sheet for 5 minutes.

Transfer the cookies to a wire rack to cool completely.

Once the cookies are cooled, spread a thin layer of apricot jam on the bottom of one cookie and sandwich it with another cookie.

Repeat with the remaining cookies.

Melt the dark chocolate and drizzle it over the top of each sandwiched cookie.

Allow the chocolate to set before serving.
