Preheat the oven to 375°F (190°C).

Cut the tops off the bell peppers and remove the seeds and membranes.

In a large bowl, combine cooked quinoa, black beans, corn, onion, garlic, tomato sauce, cheddar cheese, olive oil, salt, black pepper, cumin, paprika, and fresh cilantro.

Stuff the bell peppers with the mixture and place them in a baking dish.

Bake for 30-40 minutes, until the peppers are tender and the filling is heated through.

Remove from the oven and let them rest for 5 minutes.
