  2. Add the vanilla extract and mix well.
  3. In a separate bowl, combine the flour, cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  5. Divide the dough into 2 equal portions and shape each portion into a disk.
  6. Wrap the dough disks in plastic wrap and refrigerate for at least 30 minutes.
  7. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  8. Roll out one dough disk on a lightly floured surface into a 1/8-inch thick circle.
  9. Spread half of the chopped pecans evenly over the dough.
  10. Starting from the edge, roll the dough into a log shape.
  11. Cut the log into 1-inch pieces and place them on the prepared baking sheet.
  12. Repeat steps 8-11 with the remaining dough and pecans.
  13. Bake for 12-15 minutes, or until the cookies are golden brown.
  14. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
