Cilantro-Jalapeno Latkes with Chipotle Sour Cream
Latkes are traditionally served during Hanukkah, but they can be enjoyed year-round as a delicious appetizer or side dish.

Grate the potatoes and onion using a box grater.

Place the grated potatoes and onion in a clean kitchen towel and squeeze out any excess moisture.

In a large bowl, combine the grated potatoes, onion, cilantro, jalapeno pepper, flour, eggs, salt, and black pepper. Mix well.

Heat vegetable oil in a large skillet over medium-high heat.

Drop spoonfuls of the potato mixture into the hot oil and flatten with the back of a spoon to form latkes.

Cook the latkes for 3-4 minutes on each side, or until golden brown and crispy.

Remove the latkes from the skillet and place them on a paper towel-lined plate to drain excess oil.

In a small bowl, mix together sour cream, minced chipotle pepper, lime juice, and salt to make the chipotle sour cream.

Serve the latkes hot with a dollop of chipotle sour cream on top.
