Melt the chocolate and butter together in a heatproof bowl over simmering water. Stir until smooth.

In a separate bowl, whip the heavy cream until soft peaks form. Add vanilla extract, salt, and powdered sugar. Continue whipping until stiff peaks form.

Fold the whipped cream into the melted chocolate mixture until well combined.

Crush the Oreo cookies and press them into the bottom of a lined baking dish.

Pour the chocolate mousse mixture over the crushed cookies and smooth the top.

Refrigerate for at least 4 hours or until set.

Once set, remove from the refrigerator and cut into bars.

Serve with a dollop of whipped cream and sprinkle with chocolate shavings.
