Melt the dark chocolate in a heatproof bowl over simmering water.

In a separate bowl, whip the whipping cream until soft peaks form.

In another bowl, mash the raspberries and mix in the sugar.

Dissolve the gelatin in water and let it sit for a few minutes.

Once the chocolate has melted, remove from heat and let it cool slightly.

Fold the whipped cream into the melted chocolate.

Add the raspberry mixture and vanilla extract to the chocolate mixture and fold until well combined.

Finally, add the dissolved gelatin and mix well.
