Peel and core the pears, then cut them into thin slices.

Melt the dark chocolate and butter together in a heatproof bowl set over a pan of simmering water, stirring until smooth.

In a separate bowl, whisk together the sugar and eggs until pale and fluffy.

Gradually add the melted chocolate mixture to the egg mixture, whisking constantly.

Sift in the all-purpose flour and cocoa powder, then add the vanilla extract and salt. Fold gently until just combined.

Divide the pastry mixture evenly between 6 tartlet molds, pressing it into the base and up the sides.

Arrange the pear slices on top of the pastry, slightly overlapping.

Bake in the preheated oven for 20-25 minutes, or until the pastry is crisp and the pears are tender.
