Crush the Oreo cookies in a food processor.

In a mixing bowl, combine the crushed cookies and cream cheese. Mix until well combined.

Roll the mixture into small balls and place them on a baking sheet lined with parchment paper.

Place the baking sheet in the refrigerator and let the truffle balls chill for at least 1 hour.

Melt the semi-sweet chocolate in a microwave or using a double boiler.

Dip each truffle ball into the melted chocolate, coating it completely.

Place the coated truffle balls back on the baking sheet and sprinkle with sprinkles.

Return the baking sheet to the refrigerator and let the chocolate set for about 10 minutes.
