Chocolate ganache & Raspberry white zin Cupcakes
Raspberry white zin wine adds a unique twist to traditional chocolate cupcakes, giving them a subtle fruity flavor.

Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners.

In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt. Set aside.

In a large bowl, cream together the butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

Gradually add the dry ingredients to the butter mixture, alternating with the milk and white zin wine. Mix until just combined.

Divide the batter evenly among the cupcake liners. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and let cool completely.

In a small saucepan, heat the raspberry jam over low heat until melted. Remove from heat and let cool slightly.

Using a small knife or cupcake corer, remove a small portion from the center of each cupcake. Fill the holes with the melted raspberry jam.

In a microwave-safe bowl, heat the heavy cream until hot but not boiling. Pour over the semi-sweet chocolate and let sit for 1 minute. Stir until smooth and glossy.

Dip the top of each cupcake into the chocolate ganache, allowing the excess to drip off. Place a fresh raspberry on top of each cupcake.

In a small bowl, sift the powdered sugar. Sprinkle over the cupcakes.
