  1. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt. Set aside.
  2. In a large bowl, cream together the butter and sugar until light and fluffy. Add the egg and vanilla extract, and mix well.
  3. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  4. Divide the dough into two equal parts and shape each part into a disc. Wrap in plastic wrap and refrigerate for at least 1 hour.
  5. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  6. Roll out one disc of dough to a thickness of about 1/8 inch on a lightly floured surface. Use a tree-shaped cookie cutter to cut out cookies and place them onto the prepared baking sheets.
  7. Bake for 8-10 minutes or until the edges are firm. Remove from the oven and let cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
  8. In a microwave-safe bowl, melt the chocolate chips and vegetable oil in 30-second intervals, stirring in between, until smooth.
  9. Dip each cooled cookie halfway into the melted chocolate, allowing any excess to drip off. Place on parchment paper to set.
  10. Once the chocolate has set, decorate the cookies with sprinkles or other festive decorations.
  11. Allow the chocolate to fully set before serving or storing in an airtight container.
