Melt the dark chocolate in a heatproof bowl over simmering water.

In another bowl, mix shredded coconut, crispy rice cereal, honey, coconut oil, vanilla extract, and salt.

Pour the melted chocolate over the mixture and stir until well combined.

Line a baking dish with parchment paper and transfer the mixture into it.

Press the mixture firmly and evenly into the dish.

Refrigerate for at least 30 minutes or until firm.

Once firm, remove from the dish and cut into desired shapes.
