Chocolate Beet Muffins
Beets are a great natural food coloring agent, giving these muffins a vibrant red color without the need for artificial dyes.

Preheat the oven to 350°F (175°C).

In a large bowl, whisk together the flour, cocoa powder, baking powder, and salt.

In a separate bowl, beat the sugar, eggs, vegetable oil, beetroot puree, and vanilla extract until well combined.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Fold in the dark chocolate chips.

Spoon the batter into a greased muffin tin, filling each cup about 2/3 full.

Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.

Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
