In a mixing bowl, dissolve yeast and sugar in warm water. Let it sit for 5 minutes.

Add flour and salt to the yeast mixture. Knead the dough until smooth and elastic.

Cover the dough and let it rise in a warm place for 1 hour.

Preheat the oven to 425°F (220°C).

In a large pot, bring water to a boil. Add baking soda.

Divide the dough into 6 equal portions and shape them into buns.

Boil the buns in the baking soda water for 30 seconds on each side.

Remove the buns from the water and place them on a baking sheet lined with parchment paper.

Brush the buns with beaten egg and sprinkle coarse salt on top.

Bake the buns in the preheated oven for 12-15 minutes or until golden brown.

Allow the buns to cool on a wire rack before serving.
