Peel and grate the potato, carrot, and zucchini.

Finely chop the onion and garlic.

In a large bowl, mix together the grated vegetables, chopped onion, garlic, bacon, cheddar cheese, egg, breadcrumbs, salt, and black pepper.

Shape the mixture into patties.

Heat olive oil in a frying pan over medium heat.

Fry the patties for about 3-4 minutes on each side until golden brown.

Remove from the pan and let them rest for 5 minutes.
