Cook the ramen noodles according to the package instructions. Drain and set aside.

In a large pan, heat some oil and sauté the onion, garlic, and ginger until fragrant.

Add the curry powder and cook for another minute.

Pour in the coconut milk and vegetable broth. Bring to a simmer.

Add the carrot, bell pepper, and frozen peas. Cook until the vegetables are tender.

Stir in the cooked ramen noodles, soy sauce, lime juice, cilantro, salt, and pepper.

Cook for a few more minutes until everything is heated through.
