  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch (23 cm) springform pan.
  3. In a large bowl, beat the cream cheese and granulated sugar until smooth. Add the sour cream and vanilla extract, and mix well.
  4. Add the eggs, one at a time, mixing well after each addition.
  5. Pour the cream cheese mixture over the crust in the springform pan. Smooth the top with a spatula.
  6. Bake for 55-60 minutes, or until the center is set and the top is lightly browned.
  7. Remove from the oven and let cool in the pan for 10 minutes.
  8. Run a knife around the edges of the pan to loosen the cheesecake.
  9. Remove the sides of the springform pan and let the cheesecake cool completely.
  10. In a small saucepan, combine the raspberries, granulated sugar, water, and cornstarch. Cook over medium heat, stirring constantly, until the sauce thickens and the raspberries break down.
  11. Remove from heat and let cool.
  12. Serve the cheesecake with the raspberry sauce on top. Enjoy!
