  1. Preheat the oven to 325°F (163°C). Grease a 9x9-inch baking pan.
  2. In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of the prepared pan.
  3. In a large bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Add the eggs, one at a time, beating well after each addition. Gradually add the flour and sour cream, beating until just combined.
  4. Pour the cream cheese mixture over the crust in the pan. Smooth the top with a spatula.
  5. Bake for 30 minutes or until the edges are set and the center is slightly jiggly. Turn off the oven and leave the cheesecake bars in the oven for 2 hours to cool and set.
  6. Remove from the oven and let cool completely at room temperature. Refrigerate for at least 2 hours or overnight.
  7. Cut into squares and serve chilled.
