Cheese Grits with Morel Ragout

In a saucepan, bring water and salt to a boil. Gradually whisk in the grits and reduce heat to low. Cook for 20 minutes, stirring occasionally.

In a separate pan, melt butter over medium heat. Add chopped onion and garlic, and sauté until translucent.

Add morel mushrooms and cook for 5 minutes, until tender.

Pour in vegetable broth and thyme. Simmer for 10 minutes.

Stir in heavy cream and season with salt and pepper.

Remove the grits from heat and stir in cheddar cheese until melted.
