  1. Preheat the oven to 180°C (350°F). Grate the carrots.
  2. In a large bowl, mix together the flour, sugar, baking powder, cinnamon, cardamom, and salt.
  3. In a separate bowl, whisk together the oil and eggs. Add the grated carrots and mix well.
  4. Gradually add the dry ingredients to the carrot mixture, stirring until just combined.
  5. Spoon the batter into cupcake liners, filling each about 2/3 full.
  6. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let the cupcakes cool completely.
  8. In a mixing bowl, beat the butter until creamy. Gradually add the powdered sugar and beat until fluffy.
  9. Add the cream cheese and vanilla extract, and beat until smooth.
