  1. Preheat the oven to 350°F (175°C).
  2. Grate the carrots and set aside.
  3. In a mixing bowl, beat the cream cheese and sugar until smooth.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the grated carrots, flour, vanilla extract, ground cinnamon, and ground nutmeg.
  6. In a separate bowl, combine the graham cracker crumbs and melted butter.
  7. Press the crumb mixture into the bottom of a greased springform pan.
  8. Pour the carrot cheesecake mixture over the crust.
  9. Bake for 45 minutes or until the center is set.
  10. Remove from the oven and let it cool in the pan for 10 minutes.
  11. Transfer to a wire rack and let it cool completely.
  12. Refrigerate for at least 2 hours.
  13. Serve chilled with whipped cream on top.
