Red Bean Cheesecake

Preheat the oven to 180°C (350°F).

Crush the digestive biscuits and mix them with melted butter.

Press the biscuit mixture into the bottom of a greased springform pan.

Spread the red bean paste over the biscuit base.

In a mixing bowl, beat the cream cheese, sugar, and vanilla extract until smooth.

Add the eggs one at a time, beating well after each addition.

Stir in the sour cream.

Pour the cream cheese mixture over the red bean paste.

Bake for 45-50 minutes, or until the cheesecake is set but still slightly wobbly in the center.

Turn off the oven and let the cheesecake rest in the oven for 2 hours.

Remove from the oven and let it cool completely.

Chill in the refrigerator for at least 4 hours before serving.
