Cream of Leek Soup
Leeks are a member of the onion family and have been cultivated for thousands of years. They were prized by the ancient Egyptians and were even used as currency.

Clean and slice the leeks.

Peel and dice the potatoes.

In a large pot, melt the butter over medium heat.

Add the leeks and sauté until softened.

Add the potatoes and vegetable broth.

Bring to a boil, then reduce heat and simmer for 20 minutes or until the potatoes are tender.

Use an immersion blender to puree the soup until smooth.

Stir in the heavy cream and season with salt and black pepper.

Simmer for another 5 minutes.
