  1. Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the egg and vanilla extract to the bowl and mix until well combined.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the chocolate chips.
  6. Take a tablespoon of dough and flatten it in your palm. Place a caramel candy in the center and fold the dough around it, sealing it completely. Repeat with the remaining dough and caramel candies.
  7. Place the filled dough balls onto the prepared baking sheet, spacing them 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are golden brown.
  9. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
