Pop the popcorn and set aside.

In a saucepan, melt the butter over medium heat.

Add the brown sugar, corn syrup, and salt to the saucepan. Stir until the mixture is smooth and combined.

Increase the heat to medium-high and bring the mixture to a boil. Boil for 4 minutes, stirring constantly.

Remove the saucepan from the heat and stir in the heavy cream, whole milk, and vanilla extract.

Allow the mixture to cool to room temperature.

Once cooled, transfer the mixture to an ice cream maker and churn according to the manufacturer's instructions.

When the ice cream is almost done churning, add the caramel corn to the ice cream maker and continue churning until well combined.

Transfer the ice cream to a lidded container and freeze for at least 4 hours or until firm.
