Slice the onions.

In a large pot, melt the butter over medium heat. Add the onions and cook until caramelized, stirring occasionally.

Sprinkle flour over the onions and stir well.

Pour in the vegetable broth and white wine. Add the bay leaf, thyme, salt, and black pepper. Bring to a simmer and let cook for 30 minutes.

While the soup is simmering, prepare the garlic-flavored croutons. Preheat the oven to 350°F (175°C). Slice the French bread into 1-inch thick slices. Rub each slice with a garlic clove and brush with olive oil. Place the slices on a baking sheet and bake for 10 minutes, or until crispy.

Remove the bay leaf from the soup and blend it until smooth using an immersion blender or a regular blender.
