  4. Beat in the egg, vanilla extract, and dissolved coffee mixture.
  5. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Stir in the semisweet chocolate chips.
  8. Drop rounded tablespoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  9. Bake for 10-12 minutes or until the edges are lightly golden.
  10. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes.
