  1. Preheat the oven to 325°F (163°C).
  2. In a mixing bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan.
  3. In a separate bowl, beat cream cheese, granulated sugar, and vanilla extract until smooth. Add eggs one at a time, beating well after each addition. Stir in flour until just combined.
  4. Pour the cream cheese mixture over the crust in the springform pan.
  5. In a small bowl, toss the sliced apples with cinnamon and brown sugar. Arrange the apple slices on top of the cream cheese mixture.
  6. Bake for 60 minutes, or until the center is set.
  7. Remove from the oven and let cool in the pan for 10 minutes.
  8. Run a knife around the edge of the pan to loosen the cheesecake.
  9. Remove the sides of the springform pan and let the cheesecake cool completely.
  10. Refrigerate for at least 2 hours before serving.
