Caesar Stuffed Zucchini
The Caesar salad, which inspired this dish, was invented by an Italian-American chef named Caesar Cardini in Tijuana, Mexico, in the 1920s.

Preheat the oven to 375°F (190°C).

Cut the zucchini in half lengthwise and scoop out the seeds to create a hollow.

In a bowl, mix together the Caesar dressing, cherry tomatoes, Parmesan cheese, bread crumbs, parsley, salt, and black pepper.

Spoon the mixture into the hollowed zucchini halves.

Drizzle olive oil over the stuffed zucchini.

Place the zucchini on a baking sheet and bake for 25 minutes or until the zucchini is tender and the filling is golden brown.

Remove from the oven and let it rest for 5 minutes.
