Preheat the oven to 180°C (350°F). Grease a muffin tin or line it with paper liners.

Peel and grate the butternut squash.

In a large bowl, mix together the flour, sugar, baking powder, salt, cinnamon, and nutmeg.

In a separate bowl, whisk together the eggs, vegetable oil, milk, and vanilla extract.

Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the grated butternut squash and pine nuts.

Divide the batter evenly among the muffin cups.

Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
