  1. Preheat the oven to 350°F (175°C).
  2. Roll out the pie crust and cut into small circles to fit the mini tart pans.
  3. Press the pie crust into the pans and prick the bottom with a fork.
  4. Bake the crusts for 12-15 minutes or until golden brown.
  5. In a bowl, mix together the brown sugar and strawberries. Let them sit for 10 minutes to release their juices.
  6. In a separate bowl, whip the heavy cream, vanilla extract, and powdered sugar until stiff peaks form.
  7. Once the crusts have cooled, fill each tart with the strawberry mixture.
  8. Top with a dollop of whipped cream and garnish with a mint leaf.
  9. Chill the tarts in the refrigerator for at least 30 minutes before serving.
