Brenda’s Blackberry Scones
Ingredients
Instructions
-
Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
-
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
-
Cut the cold butter into small cubes and add it to the dry ingredients. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
-
Make a well in the center of the mixture and pour in the milk and vanilla extract. Stir until just combined.
-
Gently fold in the blackberries, being careful not to crush them.
-
Turn the dough out onto a lightly floured surface and knead it a few times until it comes together. Pat the dough into a 1-inch thick circle.
-
Use a round biscuit cutter to cut out scones from the dough. Place the scones onto the prepared baking sheet.
-
Beat the egg in a small bowl and brush the tops of the scones with the egg wash.
-
Bake for 15-20 minutes, or until the scones are golden brown.
-
Remove from the oven and let the scones cool on a wire rack for 10 minutes before serving.
