Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Cut the cold butter into small cubes and add it to the dry ingredients. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
  4. Make a well in the center of the mixture and pour in the milk and vanilla extract. Stir until just combined.
  5. Gently fold in the blackberries, being careful not to crush them.
  6. Turn the dough out onto a lightly floured surface and knead it a few times until it comes together. Pat the dough into a 1-inch thick circle.
  7. Use a round biscuit cutter to cut out scones from the dough. Place the scones onto the prepared baking sheet.
  8. Beat the egg in a small bowl and brush the tops of the scones with the egg wash.
  9. Bake for 15-20 minutes, or until the scones are golden brown.
  10. Remove from the oven and let the scones cool on a wire rack for 10 minutes before serving.
