Blueberry Rhubarb Bars
Blueberries and rhubarb are both excellent sources of antioxidants.
This is vegetarian recipe. Dish can be prepared in 90 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 9.

Preheat the oven to 350°F (175°C).

In a mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs.

Press half of the mixture into the bottom of a greased 9x9-inch baking dish.

In a separate bowl, mix the blueberries, rhubarb, cornstarch, and vanilla extract. Spread the mixture evenly over the crust in the baking dish.

Sprinkle the remaining crumb mixture over the fruit layer.

Bake for 40 minutes, or until the top is golden brown.

Allow to cool for 30 minutes before cutting into bars. Enjoy!
