Bird’s Nest Cupcakes are a fun and creative way to celebrate Easter or any spring occasion. The green coconut and jelly bean eggs make them look like adorable little bird’s nests.

  1. Preheat the oven to 350°F (175°C). Grease a cupcake pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Gradually mix in the dry ingredients, alternating with the milk. Fold in the shredded coconut.
  5. Divide the batter evenly among the prepared cupcake pan. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  6. Remove from the oven and let cool in the pan for 5 minutes. Then transfer the cupcakes to a wire rack to cool completely.
  7. Once the cupcakes are cool, tint the shredded coconut with green food coloring.
  8. Frost the cupcakes with your favorite frosting and sprinkle the green coconut on top to resemble a bird's nest.
