Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and cook until softened.

Stir in tomato paste and cook for 1 minute.

Add canned diced tomatoes, vegetable stock, dried basil, dried oregano, salt, and black pepper. Bring to a simmer and let cook for 20 minutes.

Use an immersion blender to blend the soup until smooth. Alternatively, transfer the soup to a blender and blend until smooth, then return to the pot.

Stir in heavy cream and cheddar cheese until melted and combined.

In a separate pan, toast bread slices until golden brown.

Serve the soup hot, topped with grated Parmesan cheese and accompanied by the toasted bread slices.
