  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a pan, heat olive oil and sauté the onion and garlic until translucent.
  4. Add the spinach and cook until wilted.
  5. In a bowl, mix together the cooked spinach, ricotta cheese, Parmesan cheese, salt, and black pepper.
  6. Stuff the bell peppers with the spinach mixture.
  7. Sprinkle breadcrumbs on top of each bell pepper.
  8. Place the stuffed bell peppers in a baking dish and bake for 25 minutes.
  9. Remove from the oven and let them rest for 5 minutes before serving.
