Heat olive oil in a large pot over medium heat. Add chopped onion and garlic cloves, and cook until softened.

Add fresh peas and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes.

Using an immersion blender, puree the soup until smooth.

Stir in heavy cream, fresh mint leaves, lemon juice, salt, and black pepper.

Cook for an additional 5 minutes, then remove from heat.

Serve hot and garnish with additional mint leaves if desired.
