Heat butter in a large pot over medium heat. Add onion and garlic, and sauté until softened. Add mushrooms and cook until they release their moisture.

Stir in flour until well combined, then gradually pour in vegetable broth, stirring constantly. Bring the mixture to a boil, then reduce heat and simmer for about 20 minutes.

Remove the pot from heat and let it cool slightly. Transfer the mixture to a blender and blend until smooth. Return the soup to the pot.

Stir in heavy cream, thyme, salt, and black pepper. Cook over low heat until heated through.

Serve hot and garnish with additional thyme leaves, if desired.
