  1. Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a bowl, mash the ripe bananas and chop the dried apricots into small pieces.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  4. In a large mixing bowl, cream together the softened unsalted butter and granulated sugar until light and fluffy.
  5. Beat in the eggs one at a time, followed by the vanilla extract.
  6. Gradually mix in the mashed bananas and chopped apricots.
  7. Alternate adding the dry ingredient mixture and the plain yogurt to the banana mixture, beginning and ending with the dry ingredients.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake in the preheated oven for about 50-60 minutes or until a toothpick inserted into the center comes out clean.
  10. Remove from the oven and let the loaf cool in the pan for 10 minutes.
  11. Transfer the loaf to a wire rack and let it cool completely before slicing and serving.
