  2. In a food processor, pulse the chocolate wafer cookies until finely ground.
  3. In a bowl, combine the melted butter with the ground cookies and mix well.
  4. Press the mixture into the bottom and up the sides of a 9-inch pie dish.
  5. Bake for 10 minutes, then remove from the oven and let cool.
  6. In a small saucepan, heat the heavy cream until it begins to steam.
  7. Remove from heat and add the chocolate chips, instant coffee granules, and vanilla extract.
  8. Stir until the chocolate chips are completely melted and the mixture is smooth.
  9. Pour the chocolate mixture into the cooled pie crust.
  10. Refrigerate for at least 2 hours, or until set.
  11. Before serving, top with whipped cream and chocolate shavings.
