Pistachio and Lemon Shortbreads Recipe
Shortbread originated in Scotland and has been enjoyed since the 12th century. It was traditionally made with leftover bread dough and eventually evolved into the buttery, crumbly biscuit we know today.

Preheat the oven to 350°F (180°C). In a large bowl, cream together the butter and sugar until light and fluffy. Add the lemon zest and salt, mix well. Gradually add the flour, mixing until just combined. Fold in the pistachios. Form the dough into a log and wrap in plastic wrap. Chill for 30 minutes. Slice the dough into rounds and place on a baking sheet. Bake for 12-15 minutes, or until the edges are golden brown. Allow the shortbreads to cool on a wire rack. Serve and enjoy!
