Baba’s Perogies
Perogies are a traditional dish in many Eastern European countries, with each region having its own unique variations and fillings. They are often served as a symbol of hospitality and are a staple at family gatherings and celebrations.

Boil the potatoes until tender, then mash them.

In a large mixing bowl, combine the mashed potatoes, flour, and salt. Knead the mixture until a smooth dough forms.

Roll out the dough on a floured surface until it is about 1/8 inch thick.

Use a round cookie cutter or glass to cut out circles from the dough.

Place a spoonful of filling (such as cheese, sauerkraut, or ground meat) in the center of each circle.

Fold the dough over the filling and seal the edges by pressing them together with your fingers.

Bring a large pot of salted water to a boil. Cook the perogies in batches for about 3-4 minutes, or until they float to the surface.

Remove the perogies from the water and drain.

In a frying pan, melt the butter and sauté the onion until golden brown.

Add the cooked perogies to the pan and fry them until they are crispy and golden.

Serve hot with a dollop of sour cream and a sprinkle of pepper.
