Awesome Red Beans and Rice
Red beans and rice is a traditional dish in Louisiana Creole cuisine and is often served on Mondays, known as ‘Red Beans and Rice Day’. It is believed that the dish originated from the West African and Caribbean influences in the region.

Soak the red beans overnight in water. Drain and rinse before cooking.

In a large pot, heat vegetable oil over medium heat. Add the onion, bell pepper, celery, and garlic. Cook until vegetables are softened.

Add the smoked sausage and cook until browned.

Stir in the red beans, Cajun seasoning, bay leaves, salt, black pepper, and hot sauce.

Add enough water to cover the beans by about 2 inches.

Bring to a boil, then reduce heat to low and simmer for about 1 hour or until the beans are tender.

While the beans are cooking, cook the rice according to package instructions.

Serve the red beans over rice and enjoy!
