Preheat the oven to 350°F (175°C). Cut the sourdough bread into small cubes and spread them on a baking sheet. Toast in the oven for about 10 minutes, or until lightly browned and crispy.

In a large skillet, melt the butter over medium heat. Add the onion, celery, and garlic. Cook until the vegetables are softened, about 5 minutes.

Add the artichoke hearts, parsley, thyme, salt, and black pepper. Cook for another 2 minutes.

Transfer the toasted bread cubes to a large mixing bowl. Add the vegetable mixture and Parmesan cheese. Mix well.

Gradually pour the vegetable broth over the bread mixture, stirring gently to combine. The bread should be moistened but not soggy.

Transfer the stuffing to a greased baking dish. Cover with foil and bake for 30 minutes.

Remove the foil and bake for an additional 10 minutes, or until the top is golden brown.
