Apricot Sour Cream Bars
Apricots are a good source of Vitamin A and C, and they are believed to have originated in China over 4,000 years ago.

Preheat the oven to 350°F (175°C). Grease a 9x9-inch baking pan.

In a medium bowl, combine the flour, granulated sugar, baking powder, and salt. Cut in the butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

In a separate bowl, whisk together the sour cream, egg, and vanilla extract. Pour the wet mixture into the dry mixture and stir until just combined.

Spread half of the batter into the prepared baking pan. Arrange the apricots on top of the batter. Drop spoonfuls of the remaining batter over the apricots.

Bake for 30-35 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

Allow the bars to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Once cooled, dust the bars with powdered sugar. Cut into squares and serve.
