In a large bowl, combine the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Gradually add the cold water, tossing with a fork until the dough forms a ball.

Divide the dough in half. Roll out one portion to fit a 9-inch tart pan. Transfer to the pan and press onto the bottom and up the sides. Trim any excess dough.

In a separate bowl, toss the apples with lemon juice, cinnamon, and brown sugar. Arrange the apple slices in the tart shell.

Roll out the remaining dough and cut into thin strips. Arrange the strips in a lattice pattern over the apples.

Bake at 375°F (190°C) for 45 minutes or until the crust is golden and the apples are tender.

Heat the apricot jam in a small saucepan until melted. Brush the jam over the tart for a shiny glaze.

Allow the tart to cool for 15 minutes before serving.
