Cup-a-Cobbler
Cobbler is a traditional American dessert that dates back to the 19th century. It was originally made by settlers who cooked fruit with a layer of biscuit dough on top, which resembled a cobbled road, hence the name ‘cobbler’.

Preheat the oven to 375°F (190°C).

In a mixing bowl, combine the fruit, lemon juice, cornstarch, and 1/4 cup of sugar. Mix well.

In a separate bowl, whisk together the flour, baking powder, salt, and remaining sugar.

Add the milk, melted butter, and vanilla extract to the dry ingredients. Stir until just combined.

Divide the fruit mixture evenly among 4 oven-safe cups or ramekins.

Spoon the batter over the fruit, spreading it evenly.

Sprinkle cinnamon over the top of each cup.

Place the cups on a baking sheet and bake for 25 minutes, or until the tops are golden brown.

Remove from the oven and let rest for 10 minutes before serving.
