Preheat the oven to 325°F (160°C). Line a muffin tin with paper liners.

In a small bowl, mix the graham cracker crumbs and melted butter until well combined. Press about 1 tablespoon of the mixture into the bottom of each muffin liner.

In a large mixing bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Add the eggs, one at a time, beating well after each addition. Gradually add the flour and mix until just combined.

Spoon the cream cheese mixture over the graham cracker crust in each muffin liner, filling each about 2/3 full.

In a separate bowl, mix the apple pie filling and cinnamon. Spoon a small amount of the apple mixture over the cream cheese mixture in each liner.

Bake for 20-25 minutes or until the cheesecakes are set and slightly golden on top. Remove from the oven and let cool in the muffin tin for 10 minutes.

Transfer the mini cheesecakes to a wire rack and let cool completely. Refrigerate for at least 1 hour before serving.
