Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a large bowl, combine the flour, sugar, baking powder, and salt.

Add the cold cubed butter to the flour mixture and use your fingers or a pastry cutter to cut it into the flour until it resembles coarse crumbs.

Stir in the shredded cheddar cheese and chopped apple.

In a separate small bowl, whisk together the egg, heavy cream, and vanilla extract.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Turn the dough out onto a lightly floured surface and gently knead it a few times to bring it together.

Pat the dough into a circle about 1-inch thick and cut it into 8 wedges.

Place the scones onto the prepared baking sheet and bake for 18-20 minutes, or until golden brown.

Remove from the oven and allow the scones to cool for 10 minutes before serving.
